Shrove Tuesday Pancakes

March 5th is Shrove Tuesday or Pancake Day, which means that tomorrow is Ash Wednesday.

In the Caribbean, the pancakes we ate on Shrove Tuesday were different from the pancakes eaten the rest of the year. We either enjoyed pancakes that were very thin or ones that were deep-fried. 

Below are recipes for both.

Ingredients:(for thin pancakes)

2 large eggs

500 ml of milk

250 grams of flour

1/4 teaspoon of salt

butter for cooking

Icing sugar ( for sprinkling after cooking)

Lemon juice ( for sprinkling after cooking) 

 

Method:

Combine flour and salt in a mixing bowl.

In a separate bowl, lightly mix the eggs, then add the flour into the mixed eggs.

Pour in half the mix and continue mixing the ingredients.

Add the remaining milk and mix until smooth.

Heat a pan and coat the bottom with butter.

Spoon pancake batter into the pan.

Cook for about 30 seconds, then flip. Cook for 30 seconds again. 

Plate the cooked pancakes, sprinkle with sugar or lemon juice according to taste.

Eat immediately.

 

The recipe for the fried version is below.

Ingredients:

1/4 teaspoon salt

2 cups of flour

1 teaspoon instant yeast

Optional 1/4 teaspoon ground cinnamon, also optional 1/4 teaspoon nutmeg

3 eggs

1 teaspoon vanilla essence

3/4 cup milk

Oil for frying

1 cup of sugar

1 cup water for syrup

 

Method:

Add flour, sugar, salt, yeast and cinnamon/nutmeg in a large bowl. Mix thoroughly.

Add the eggs and vanilla extract in a separate bowl. Whisk gently.

 Make a well in the center of the dry ingredients and pour the egg mixture into it. Mix until smooth. 

Cover and let rise for 1 to 1 1/2 hours.

Heat a pan for medium heat.

Drop the mixture into the heated oil, using a spoon. Fry for 1 minute.

Remove from oil. Drain.

In a separate pot, heat 1 cup of water and one cup of sugar. 

Stir until the sugar is dissolved.

Pour the sugar mixture over the cooked pancakes. Alternately, you can simply roll the pancakes in sugar until they are totally covered.
